Kuza Shurpa (also spelled kuza shorpa or kooza shurpa) is a hearty, traditional Central Asian and Uzbek meat and vegetable soup, with the word kuza referring specifically to a clay pot. Instead of being cooked on an open stovetop or in a large cauldron, all the ingredients are layered inside individual clay jugs and slow-baked in the oven.
